whats the difference with gaming between these 2 peeps ?

Its just the way your CPU handles the information, The 64 bit allows you to use more RAM and a lot more effectively, I'm pretty sure it doesn't have an affect on gaming.

But if you have 4GB or RAM or more, just install the 64 bit, You can still install 32-bit apps

If your graphic card uses a **** ton of RAM, it may slow your computer down, and possibly even lag games that use quite a lot of RAM.

My recommendation, if you're standing with the choice to get 32 or 64bit, always get 64 bit. You'll most likely upgrade your computer at some point, and 32bit is obsolete.

all 64bit I got here peeps. system getting on a bit now,4 years old though.
system specs are....

intel q9450 cpu
4gb corsair ram
asus rampage motherboard
700watt psu

getting on a bit so would you say still use the windows 7 64bit platform rather than the 32bit...

I got windows 7 home premium 64bit disk
or windows 7 professional 32bit version

which 1 of these 2 is best to use for gaming then...?

I would say go for Home Premium (feel free to correct me on this one), more features tend to use more resources, however I cannot say this for certain. I would go for home premium unless you need some specific features that's only available in the professional one.
